A HEALTH food restaurant in Leigh run by a world-renowned chef has been named in the Michelin inspectors' best dishes of the month.

Food, based in Leigh Road, is run by John Lawson, who has worked with celebrity chefs Raymond Blanc and Gordon Ramsay – and was even a private chef for the Beckhams.

One of 10 Michelin Guide recommended restaurants in Essex, the restaurant has received high praise after it was visited by one of the inspectors in November. 

The Michelin Guide website states: "With the Michelin Guide inspectors on the road throughout the year, they eat a vast array of dishes from all cuisine types and restaurant styles.

"Each month we ask our Inspectors to choose a stand-out dish from the past month's restaurant visits. This could be the most creative dish they ate, something that hit the right note at just the right time or simply the one that stuck in their memory for the longest."

Lawson's roast breast of pheasant, beetroot, blackberry sauce, leg ragu, swede and carrot mash, was named as one of the inspector's favourite dishes in 2023.

Praising the dish in November, the inspector says: “As we venture deeper into game season, it’s great to see so much quality produce appearing in restaurants; in this case, two delicious, nicely trimmed pheasant breasts.

“The other elements on the plate also impressed, including sharp purple beetroot and a smooth, subtly sweet beetroot and blackberry sauce – a classic combination that always works so well.

“On the side was a delicious ragu made from the leg meat, served on an equally enjoyable carrot and swede mash.”
