AS a new Mexican-style street food restaurant prepares to open its doors for the first time, take a sneak peek inside Southend High Street's newest addition.
Plan Burrito is the first ever business venture for husband and wife Riju Vargghese and Sharon Riju.
The transformation of the former Warren James jewellers is now complete, with the inside of the restaurant fully-loaded.
The restaurant specialises in Tex-Mex street food including tacos, churros and a full range of burritos. The full menu is set to be revealed soon, including the "southwest caramel smashed beef burrito".
On the opening day, customers whose eyes are as big as their stomachs will be able to take part in a "Plan vs Man" eating challenge which will see diners take on a “giant” burrito.
If they manage it, the brave customer will win a prize and end up on the restaurant's "wall of fame".
Once open, the restaurant will offer “blue light” discounts to NHS and emergency services workers, along with discounts for students.
Plan Burrito hopes to attract university and college students, so Sharon and Riju say they are ensuring their prices are “pretty affordable”.
