The robbery took place at the Hope Hotel, on Southend seafront, after the Southend airshow.
Officers are investigating the possibility the man used a key to get into the hotel in Marine Parade, just after 3am on the morning of Tuesday, May 29.
Det Con Gavin Wiseman said: "He is seen coming down Hartington Road and, as he walks down, you see him producing something from his pocket.
"It appears to be a balaclava, which he rolls up his face and then rolls down before going into the hotel.
"The man is seen going into the Hope Hotel and, once inside, makes his way to an office where 10,000 was stolen.
"He made off after being disturbed."
The owner of the hotel, his wife and an employee were in the hotel at the time.
The man is thought to be white and between 5ft 10ins and 6ft 2ins tall.
